Time flies when you're having fun

Holy buckets it's been a while since I turned on my computer.  The days and evenings have been flying by so quickly that it's hard to keep up.  Then we have this amazing weather to deal with as well...I sure wish I had a little magical worker that came in to my house and got the laundry and dishes done so I could enjoy every single minute of my time away from work outside.  I am writing this post from my deck, outside...in a t-shirt and flip flops.  Now all I need beside me is a cold Coors Light.  It's coming, don't worry.  Just one though, I am into this new thing called exercise.  I am going to a Zumba class tomorrow morning.  Have you tried it?  It's a ton of fun and a really good work out.  It's almost like a hip-hop dance.  The hour flies by and I am soaking wet by the time I am done.  You pretty much shake your booty the entire time.  It's fun!
I've thought about if I should say anything about me trying to make exercise a part of my life on my blog.  I can't tell you how many times I have started and failed.  Given up and gotten lazy again.  Maybe if I can make mention of it on my blog, I will be more accountable?  I don't want to make a big deal about it but once I get myself out there and finish, I feel so proud.  I can actually run a mile without having to walk.  A girl that I work with has been "coaching" me.  She is in nice shape and running is something she has done for a long time.  The t-shirt collection she has from all of the races she has participated in is amazing.  I want one of those t-shirts.  It's almost like a trophy to me.  I want to be able to say that I am a runner...an athlete.  Ha, wouldn't that be something?  To see me on the bike trail running like it's nobody's business, on a Saturday afternoon jog that I actually ENJOY?!  I'm working on it.  It's slow going but every day that I can get out there is better than any day I stay on the couch.    I'll try to keep you posted.

Last night after work I headed right for the cities to meet my good friend Jessie.  She was coming up from Yankton, SD for a class and asked me to meet her up there for a night of shopping and dinner.  Heck yeah I was coming!  I couldn't get out of work fast enough.  This was our view from our room.


We had so much fun catching up.  I had my first experience at an American Doll store.  Man those dolls are expensive, there has to be some gold inside of them some place.  Cute store though, all of the accessories you'd ever need for your little dolly.
Jessie looked amazing!  She had her three babies pretty much back to back, not a lot of time to lose the baby weight and get back in shape.  She's now done it.  She's a runner.  She's an athlete.  I need her here to keep me motivated. I can't tell you how many times I just looked at her in aww.  She did it on her own with no gym membership, no trainer, no surgeries...just hard work.  One of the comments she said to me has been stuck in my mind since she said it...."Kelly, you put yourself down way too much, you are too hard on yourself about your body and you need to stop."  I do.  I have to stop.  Giving myself compliments will make me stronger.  It will make me want to work harder.  She was right.  Thank you Jessie for saying that.  It was a good eye opener.

Wow, it's like I am in a confessional booth at Church tonight, huh?!  I needed to get that off my chest.  You all read my blog because something about it makes you keep checking to see if there are new posts.  You aren't just looking for my food ideas are you?  Should I give you a new one?  Ok, let's begin...

I wanted something different that would be quick, simple, yummy, and HEALTHY.  I never usually buy pork chops because the whole thought and texture of "fatty" meat kind of grosses me out.  I do not like any kind of fat on meat what so ever.  I never eat it and never will.  I don't care what you do to it.  If I can see fat, it will get cut off.  If it ends up in my mouth, it will then end up in a napkin.  I stopped at the butcher counter at the grocery store and looked for specials.  I don't buy meat unless it's on sale.  Thick cut pork chops were on special.  I thought about it, looked at them for a while, and decided I'd give the pork chop idea another try.  I went online and looked for a marinade, one where I would have everything already on hand at home of course.  I found one, and it was amazing!

Pork Chop Marinade
(allrecipes.com)

1/2 cup lemon juice
1/2 cup soy sauce
1/2 cup olive oil
2 Tbs brown sugar
2 tsp onion powder
1 tsp oregano

Combine all of the ingredients into a gallon size ziplock bag.  Make sure it's all mixed up good and throw in your pork chops.  I bought 1 inch thick boneless pork chops.  I put 4 in this bag.  If you did 2 pork chops, just cut the recipe in half. I marinated my chops for about 9 hours.  I put them in the fridge before work and grilled them when I got home after 5. 


Dane said it was like eating a steak.  Awesome flavor and really juicy.  And no, I did not eat that fat on the edge.  It was cut off before I ate mine.  Yum without the fat!  Try it, you're whole family will like them.

Shorts in the middle of March, who doesn't love that?  We're bike riding this weekend for sure!
